Fennel and Mushroom Salad

Starting again after so many month's off. I've been busy and don't have a lot of access to a computer. Here's a recipe that I've been asked about several times. It's one that I got from a friend of mine last year. It's so easy that it can be made up in no time at all.  Also, I don't measure anything so I'm sure you'll be able to guesstimate pretty well for your own taste.

Fennel and Mushroom Salad

1 bulb fennel, chopped
5-6  cremini mushrooms, sliced thinly
1-2 T olive oil
1/2 lemon, juiced or more to taste
salt & pepper

Mix together and sprinkle with salt and pepper.

I started growing my own fennel after moving back to the States. A lot of times I cut off the stems with the leaves and flowers, wash them and throw them in my smoothies. It makes a nice liquorish flavor.

Day 2 of Green Smoothie Cleanse

Last fall I did a cleanse with a Christian coach named Ginny Edwards. We have a really nice closed FB group where we can share our experience and support each other. This has been very interesting to me. Though I lean toward Buddhism, I also enjoy some of the Christian values and love the community.

Today is day 2 on a 21 day cleanse with this same group. I realized that I'm eating way too much fat; eating too many nuts, seeds, olive oil, coconut oil, avocados. A little is fine, but my consumption is too high. I can feel it in my heart. Hence the cleanse.

I'm not sure if I can be fat free for 21 days. Especially since my father-in-law is having his 80th B-day party at a Chinese restaurant. I hate eating at Chinese restaurants. There's nothing there I can eat. They won't let me bring my own food. So my idea is to bring my smoothies with me and drink them on the way to the mountains, or once I get there so I won't be tempted. If I can bring them to the table, I will.

Today, life is good. I will keep my goal of drinking smoothies and juice this day.
